'Miyeokguk' Korean Seaweed Soup

Description: Try this light, healthy, and nutritious Korean seaweed soup. Easy to make and is rich in iodine, iron, and calcium while helping lower cholseterol. This recipe suggests beef but there are many alternatives. Oxtail or seafood is also popular, or even skip the meat and go vegetarian!

Ingredients: 1/2 ounce dried miyeok(seaweed), 8 cups water, 4 garlic cloves (minced), 1 tablespoon fish sauce (or salt and soy sauce), 2 teaspoon toasted sesame oil, 1 pound beef.

Instructions: Soak miyeok in cold water for 30 mins. Rinse and drain, squeeze excess water and cut into bite-size pieces. Begin cooking rice. Transfer miyeok to boiling water. Let it boil for 10 minutes then reduce to medium heat. Add sesame oil and meat. Gently stir for 2 minutes then add the garlic, fish sauce and soy sauce. Cover the pot and boil over medium heat until the meat is fully cooked (10 to 15 mins). Adjust salt to taste.
