Chicken Parmesan

Ingredients: 4 boneless chicken breast halves, 2 eggs, 3/4 cup grated parmesan cheese, 2 tablespoons all-purpose flour, 1/2 cup tomato suace, 1/4 cup fresh mozzarella, 1/4 cup chopped fresh basil, 1 cup panko bread crumbs, salt and fresh black pepper.

Instructions: Preheat oven to 450 degrees F (230 degrees C). Place chicken breasts between two sheets of plasic and pound until 1/2-inch thick. Season both sides with slat and pepper, and sprinkle flour coating both sides. Beat eggs in a bowl. Mix panko and 1/2cap parmesan cheese in a bowl. Dip the coated chicken breasts in the eggs, then dip into the bread crumbs. Let rest for 10 minutes. Heat 1/2 inch olive oil in a large skillet on medium-high heat. Wait until oil begins to shimmer then cook each breast for two minutes per side. Transfer chicken to baking dish. Top each with 2 tomato suace, mozeralla cheese, and fresh basil, remaining parmesan and drizze 1/2 teaspoon olive oil Bake for 15-20 minutes, until internal temperature 165 degrees F (74 C).
